Start by creaming your butter and sugars together on low for 2 minutes. Add in your egg, peppermint extract and combine low speed for another 2 minutes. Add in your flour, baking soda, baking powder and salt and fold to combine. Add in your white chocolate chips and crushed peppermint and fold till combined.
