@_lacebakes_: Jalapeño Popper Grilled Cheese aka the best grilled cheese I’ve ever had! 🌶️🧀🥓🍞 Inspired by a leftover Jalapeño popper cheese ball I made for Thanksgiving. The recipe for that cheese ball is by Small Town Woman (on her blog)… Ingredients For the sandwich 2 slices bread - I like sliced sourdough Jalapeño sliced into rings (measure with your heart) 3-4 slices bacon, cooked crispy Softened butter to spread on the bread Panko breadcrumbs (enough to press into the butter on the bread) Handful grated mozzarella cheese (measure with your heart) For the jalapeño popper cream cheese 3 tablespoons cream cheese 3 tablespoons finely grated cheddar or Red Leicester cheese 1 teaspoon Greek yogurt or sour cream 1 piece of super crispy bacon, diced finely 1 tablespoon finely diced jalapeños 2 teaspoons finely diced green onions 1/8 teaspoon garlic powder/granules 1/8 teaspoon onion powder Freshly cracked pepper to taste Start by mixing together all the ingredients for the jalapeño popper cream cheese. Cook your bacon using your preferred method - I just put it under the broiler/grill in the oven for about 3-5 minutes until crispy. Preheat a large frying pan over a medium heat. Add in a little bit of butter. Spread the outside of the bread with softened butter and press panko bread crumbs firmly into the butter. Flip the bread over and spread the jalapeño popper cream cheese evenly on both sides of the bread. Top one side with fresh jalapeño rings and top the other with a handful of grated mozzarella cheese. Place the bread (panko side down) into the preheated frying pan and cover the pan with a lid or a large plate to trap the steam in. Cook over a medium/low heat until the bread is crispy and the cheese is fully melted (about 5-6 minutes). At this point the bacon should be done, so place the strips onto the cheesy side of the sandwich, close the sandwich up and remove from the frying pan.
