Soft Gingerbread Man Cookies 🧸 * 4 1/4 cups all-purpose flour * 1 teaspoons ground ginger * 3 teaspoons ground cinnamon * 1/2 teaspoon ground cloves * 1 1/2 teaspoon salt * 1 teaspoon baking soda * 1/2 cup unsalted butter, softened to room temp * 1 1/2 cup light brown sugar, packed * 1 large egg room temperature * 1/4 cup hot water * 2/3 cup blackstrap molasses Instructions  * Dry ingredients. Whisk the dry ingredients in a large bowl.  * Cream the butter and sugar. In a large bowl using a stand mixer fitted with a paddle attachment, beat the butter and brown sugar together until fluffy about 2-3 mins. Add the egg, molasses, and hot water, and then beat on high speed for another 1-2 minutes, until fluffy.
 * Add the dry ingredients with the mixer running on low speed, gradually add the dry ingredients. Beat on low until combined.  * Chill the dough place dough on plastic wrap, flattening it out to form a disc. Wrap and chill for at least 2 hours or overnight.
 * preheat the oven to 350°F. Line two large cookie sheets with parchment paper. Roll and cut the dough. Using a rolling pin, roll out one of the dough between two more pieces of parchment paper to 1/2-inch thick. Cut the cookies out using a gingerbread man cut out. Roll the scraps into a ball and re-roll and Repeat with the rest of the dough.
