MEAL PREP WITH ME 🍽️  This weeks Sunday meal prep consists of Honey Berry Overnight Oats for breakfast & One Pan Mexican Chicken Rice for lunch. Save for some meal prep inspo!! ☝🏼 BREAKFAST: •Honey Berry Overnight Oats •348 kcals - 19g PRO, 46g CHO, 10g FAT For 1 serving: -40g of oats -15g of chia seeds -100g of 0% non fat Greek yoghurt -3/4 drops of @myprotein Toffee flavdrops  -150ml of unsweetened almond milk -Handful of berries -1 tsp of honey Method: 1. Mix the oats, chia seeds, yoghurt, milk and flavor drops together until smooth.  2. Top with some berries and drizzle over the honey. 3. Place in the fridge overnight.  LUNCH: •One Pan Mexican Chicken Rice •421 kcals - 45g PRO, 51g CHO, 7g FAT Serves 4: -440g of uncooked chicken breast -240g of uncooked basmati rice, rinsed -1 red onion -1 red pepper -1 chicken stock cube mixed with 480ml of boiling water -2 tbsp of tomato paste -50g of sweetcorn  -40g of cheddar, grated -20g of Parmesan  -Coriander leaves (optional) Seasoning: -2 tsp of paprika -1 tsp each of cumin, chilli powder, garlic powder -1/2 tsp each of onion powder and cayenne pepper -1 tsp of sugar Method: 1. Spray a pan with oil. Add the red onion and chicken with a dash of water. Add the pepper and let it cook for 5-10 minutes. 2. Mix in the seasoning. Add the rice, chicken stock and tomato paste. Simmer for 5 minutes then cover with a lid. Reduce the heat and let it cook for another 10 minutes until the rice has absorbed all of the water. 3. Once cooked, mix in the sweetcorn and top with the cheese. Cover again to melt the cheese. 4.
