I’ve never had Peking duck like this, and I can see why it’s considered some of the best in Taiwan. Served five-ways, my favorite was the duck nigiri with crispy duck skin, melted cheese, and seasoned sushi rice. The luscious duck fat just coats your tongue. Yilan is known to have the best scallions in Taiwan, so the scallion pancake duck wraps were so flavorful. And the more traditional thin wraps, which I preferred, were also made with local scallion. And there’s more. The rest of the duck went into an umami rich three-cup duck clay pot and a hearty duck bone soup.
