@jenksbbq: Ribs on the Pellet Smoker It’s been a while since I used the original 3/2/1 method for ribs, and let me tell you—it did NOT disappoint! This foolproof technique delivers smoky, glazed, and fall-off-the-bone goodness every time. Here’s the Recipe: 1️⃣ Prep: Remove the membrane from the back of the ribs. Season generously with @Heath Riles BBQ Competition BBQ Rub and Honey Rub. 2️⃣ Smoke: Place the ribs on the @recteq pellet smoker at 250°F for 3 hours. 3️⃣ Wrap: Pull the ribs off and wrap them in foil with butter, BBQ sauce, seasoning, and brown sugar on both sides. Smoke for another 2 hours. 4️⃣ Glaze: Turn the foil into a boat, add a thin layer of BBQ sauce, and smoke for 1 more hour to get that perfect glaze. The result? Anytime I do 3-2-1 they are not overcooked they’re burnt. But I have a Louisiana smoker so that’s prob the problem.

Pitboss - 3hrs in Smoke (150-180F) 2hrs wrapped same temperature 1hr removed at 200F. I do dry rub only, meat hits 198-200f I take them off.
