Mthawamet bandora (مثومة بندوره) Ingredients: - 4 ripe juicy tomatoes. - 1 head of garlic - 3 tbsps full fat yogurt - 1 tbsp tahini - salt - olive oil @ndcmuscat - chop the tomatoes in half. Place them on a baking tray. Season with salt and a drizzle of olive oil. - place them in the oven at 200c for about 25 minutes. And broil them ( top heat in the oven) on high for another 5 minutes or till the tomatoes take a color and soft and cooked. - let them cool a bit then peel them off and add them to a bowl. - mix the yogurt with tahini. Salt and 2 cloves of mashed garlic and add it on the tomatoes. - mix them very well but keep the tomatoes a bit chunky. - slice the rest of the garlic and fry in a tbsp of ghee and a tbsp of olive oil on medium heat for a couple of minutes. - once the garlic takes a bit of color. Pour it directly on the tomatoes. - serve it warm with a loaf bread. A cup of tea and enjoy.
