Who else was sick over Christmas and new years so they’re celebrating this weekend instead? 🙋🏻‍♀️ just me?  These homemade ginger bread cookies were so good that I’m not going to be waiting another year to make them. They may just become a cookie staple in this household! Gingerbread valentine cookies, st pattys cookies, they’re going to be every holiday cookie. Here’s the recipe from Living the Gourmet: Ingredients for cookies: 3 cups all purpose flour 1 tsp baking soda 1/2 cup white sugar 1/2 cup dark brown sugar  1 egg 1 tsp ground cinnamon  1/2 tsp ground cloves 3 tsp freshly grated ginger root 2 tbsp unsulfured molasses  1/4 cup canola oil 4 tbsp butter Pinch of salt  Icing: 1/4 cup white chocolate chips Pat of unsalted butter  -In a large bowl, mix sugars, egg, cinnamon, cloves, fresh ginger, oil, butter, molasses and salt. Stir until combined.  -Sift flour and baking soda into the bowl and mix until wet sticky dough forms.  -transfer dough to cling film, wrap and refrigerate for a couple of hours until firm.  -preheat oven to 350 F -flour your surface and rolling pin. Turn dough out onto floured surface and roll the dough out into a large rectangle about 1/4 inch thick, or roll pieces of the dough out into sections.  -use a cookie cutter to cut into desired shapes. Place cookies on a greased baking sheet.  -bake for 8-10 minutes or until cookies are golden brown. Transfer to cooling rack and let cool completely.  -in a double boiler or microwave, melt down white chocolate and butter. Transfer to piping bag and decorate cookies as desired.
