Recipe 👇🏼🍜 -2lbs oxtail (you can also do 1lb beef bone and 1lb beef meat of choice) -2 onions, halved -2 2 inch knobs of ginger, peeled -1 pho spice packet, I’m a lazy girl so I use the pre-measured ones -3 tbsp sugar, or a 2 inch rock sugar -3 tbsp fish sauce -beef meatballs -enough water to fill the pot Pairings: -rice noodles -limes -jalapeños -Vietnamese basil/mint/ngò gai -bean sprouts -sriracha/hoisin sauce instructions: 1. Bring a large pot of water to boil and add the meat & bones. 2. Let simmer for 10-15 minutes then drain and rinse off any residual gunk. This purifies the bones and ensures a clear broth. 3. In a pan, gently roast your spices until they’re toasted and fragrant, then place them into a spice bag. 4. In the air fryer or oven, broil your peeled halved onions and ginger until they start to char, then set aside. 5. In a 6/8qt pressure cooker, place the bones, onions, ginger, sugar, fish sauce, and spice packet in the pot and fill it up with water. Make sure everything is submerged. 6. Pressure cook on high pressure for 45 minutes, then slow release for 15 minutes. 7. Discard the spice packet, onion, and ginger, then strain the broth for any floating pieces of fat and gunk 🦶🏼 8. Add in the meatballs to heat, and serve with your favorite toppings!
