Today might be the first official day of Spring but here in the Northeast, it's still rather chilly. Our hearty one pan Pesto Chicken with White Beans will warm the soul! Enjoy! Pesto Chicken with White Beans Ingredients: 5 bone-in chicken thighs, seasoned with salt & pepper on both sides 2 cans drained cannellini beans 1/2 c sour cream 1/2 c pesto (we used our own homemade version) 1/4 c parmesan cheese 1/2 small yellow onion, small diced 1 shallot, small diced 6 cloves garlic, minced 1/2 c chicken stock 1 stick salted butter, divided scallions thinly sliced for garnish olive oil Preheat oven to 375 degrees. Heat a cast iron (or other oven safe) pan, add 1/2 stick butter and a generous drizzle of olive oil to your pan and let it melt down. Once butter and oil is melted and hot, add chicken, skin side down to the pan. Cook about 4 minutes on the first side so you get a nice crust on it. Flip chicken and sear another 3 minutes on the other side. Remove chicken from pan and set aside (to be finished at the end). In the cast iron pan that you made the chicken in, add in the other 1/2 stick butter and melt down. Add in onion and shallot and sweat down. Add in garlic. Once the garlic becomes fragrant, add homemade pesto and 1/2 chicken stock, lower heat, and add in white beans. Dollop the sour cream over the sauce mixture and stir to fold in. Once the sour cream is melted and combined, add your chicken thighs back to the pan. Sprinkle lightly with a little bit of the parmesan. Put your cast iron on a sheet pan and bake chicken and sauce in the oven for 35 minutes. When chicken is finished, garnish with parmesan and scallions.
