Italians are not gonna like this one… but just trust me, it’s really good!  Make it for yourself! Recipe below ⬇️  Ingredients(serves 2): Chicken cutlets: -1 chicken breast, sliced thinly -1 cup AP flour -1 cup seasoned italian bread crumbs -2 large eggs -1/4 cup buffalo sauce -olive oil -salt Pasta: -1/2 lbs spaghetti -6 strips bacon -4 oz blue cheese, crumbled -2 whole eggs -2 egg yolks -2 tbsp buffalo sauce -fresh ground black pepper Recipe: -create a 3 part breading station.  One bowl of AP flour, one with eggs whisked with buffalo sauce, and one of Italian bread crumbs. -coat a thin slice of chicken breast in flour, then in the egg mixture, then in the bread crumb mixture -cover bottom of pan in olive oil.  Enough to shallow fry, and heat on 6/10 heat. -add chicken cutlets to oil and fry 2-3 minutes each side.  Lay it away from your body when placing in oil.  Should sizzle mildly aggressive.  Shouldn’t splatter everywhere, but shouldn’t be a light sizzle. -place on a paper towel lined plate and season immediately with salt. -begin to boil pasta water.  Add salt to water -slice bacon into strips 3/4” in width -add to cold pan, and turn on medium heat and cook until crispy. -remove bacon from pan, leaving the fat behind. -add pasta to boiling water and boil for 8-10 minutes, until Al dente. -in a small bowl, add eggs, egg yolks and buffalo sauce.  whisk together. -add 3/4 of the blue cheese to the mixture and a bunch of cracked black pepper. Mix together. -once pasta is done, add it directly to the pan with the bacon fat on high heat, along with a ladle of pasta water.  Stir vigorously. -remove from heat completely and wait 1-2 minutes for pan to cool a bit  -add egg/cheese/pepper mix to the pasta and immediately stir vigorously.  If it turns to scrambled eggs, the pan was too hot still.  If it is still too runny, the pan was not hot enough.  Turn it on low heat while mixing constantly until sauce thickens, but eggs don’t scramble. -taste and add more blue cheese and buffalo sauce if necessary -serve on a plate.
