Dough: 160ml warm milk or 210ml milk with no egg  7g instant yeast  60g melted butter  20g sugar  380g strong flour / bread flour  Filling: 50g softened butter  50g brown sugar  1 or 2 tsp cinnamon  Icing;  120g icing sugar  60g soft cheese  1 x tsp vanilla paste  Milk  Mix all the dough ingredients together in the order listed, IF you’re using egg add it in after the flour, mix till combined and knead on a well floured surface for 5-10min (10 min is best) i recommend kneading on a wood surface rather then a granite type work top. Cover and rest for 60 min. Mix your filling ingredients together and set aside  Grease a loaf tin very well with butter as it will get sticky from the filling  Once risen punch down the dough and cut into 3 equal parts (I weigh the dough and divide by 3 and weigh each piece but you can approximate too) shape each one into a ball by pressing the dough inwards and then rolling it into a round shape. Starting with the ball you rolled first (keep the others covered) flatten it out with your fingers, add some filling and seal it up by folding inward halfway and pressing down, fold the other side into the middle and then fold over itself and seal it in the middle as shown in the reel. Roll it out and stretch it GENTLY till you have a rope shape and repeat with the other two pieces of dough. It’s ok if some of the cinnamon butter leaks out, it will caramelise and be delicious.  Plait the dough and tuck the ends in. Place into your tin and cover and rest for 30min Preheat your oven to 180C and after 30 min bake for 25-30 min  Make your icing by mixing icing sugar, cream cheese and vanilla together add milk 1 tsp at a time to get your desired consistency.
