Thai omelette (Khai Jiao) with sausage, mushrooms and spring onions drizzled with a little sweet chilli sauce. I love these omelettes. They are my fav ❤️ To make a Thai omelette you need: 2 eggs 1 teaspoon lime juice 1 teaspoons of fish sauce 1/2 tablespoon of cornstarch (cornflour) Little water 1 teaspoon of oil of choice (this is a must) Remove skin from two low calorie sausages, brown, add mushrooms, soy sauce, black pepper and cook until golden, then add in 1 chopped spring onion. Add egg, lime juice, fish sauce of bowl, whisk the cornstarch with 1/2 tbs of water and then whisk into eggs until combined. To cook the omelette heat the teaspoon of oil until really hot (This is a must, you can test it’s hot with a little drop of the egg), pour egg in from high so it sizzles as it hits the pan (non stick pan is a must here). Then as it starts to cook push the egg across the pan so you get folds, flip when golden.
