I think the lack of food media in general is a big problem for the hospitality industry. Michelin made a bit more sense back when there were other critics and opinions / broader context.

Michelin isn’t only about the stars. They also have the Bib Gorumand moderateley priced restaurants and the general Michelin recommended guide.

while the Michelin guide visited Toronto, I'm glad they didn't give a few of the spots I visit continuously any stars lol. I love the food there and most patrons are from the nearby area.

But they did get some restaurants (and by this I mean techniques and styles) known to the world, which really impacted the way people see the culinary art. Think of Noma or El Buli, they invented new ways too cook and present dishes, that’s they got those stars. And you’re right, they don’t check every restaurant in the world (it would be impossible) so maybe that’s not their fault but the people that follow them. Stop being sheep and just ask locals where to eat.

The pho place i go to was always empty. It tastes okay. But it was announced that they almost got a star & it has be booked out since. Ik they paid for that article lol.

There is similarity to Robt Parker (etc) wine scores, which forces winemakers to lean into homogeneity. That being said, there is valid travel & tourism justification for doing whatever to attract visitors…which is the functional purpose of t&t officials so the business case is solid. Do we find fault? Of course. Better to search out dining excellence more intimately. But Michelin recognition is pretty good in a pinch.

the thing with the guide is that its not possible to be everywhere, its expensive to fly the inspectors to get there, even more to train enough.

Austria just had their first inspection in 19 years. Although it is a country that flourishes due to tourism and their high level service the government had to pay the Michelin Guide 2 Mil€ to come.

Non of this is “sinister” or really even that bad… they’re a private business that grades restaurants on how worthy it is for a visit… so, yes a super high end dining experience that is more worth while to travel to, is going to have more value in the marketplace, so logically it is going to cost more to dine at that establishment… also, while yes governments are paying for the presence of the Michelin guide, they still have to have restaurants worth the experience in order to get their stars…
