Stir in the chopped pecans, a pinch of salt, and vanilla extract if using. Simmer for another 1 or 2 minutes until thickened slightly. Remove from heat and let cool for 5 to 10 minutes to thicken. Once the cookies have cooled completely, spoon about a teaspoon of the pecan topping into the center of each one. Let it set slightly before serving.
