@chefdwightsmith: Bacon Jam Double Cheeseburger This was incredible. The sweet and salty hit from the bacon jam on top of those smash burger patties. Bacon Jam Recipe Ingredients; 8 strips Bacon - chopped 1 small white Onion - diced 1 clove Garlic - minced 2 sprigs Thyme - chopped 1/4 cup Brown sugar 2 tablespoons Maple syrup 1/4 cup White vinegar 1 teaspoon Salt 2 teaspoons cracked Black pepper Method, Render chopped bacon in a skillet until bacon is crispy. Carefully remove bacon from pan. Sweat your diced onions garlic and thyme in the remaining bacon fat. Allow this to cook for 3-4 minutes on medium heat while stirring. Add brown sugar, maple, and vinegar and bring this up to a simmer. Allow this to cook for 4-5 minutes or until liquid starts to thicken up. Remove from heat and season with salt and black pepper.
