Grab my cookbook  “Low-Cal Kitchen Bangers” through my bio 💕 Ingredients (serves 2):  120g dry pasta  50ml pasta water  200g diced chicken breast  Salt  Pepper  1 tsp smoked paprika  1 white onion diced  2 tsp chopped garlic  Heaped tsp chipotle paste  Tbsp tomato puree  100ml Elmea 45% less fat single cream alternative (can use reduced fat creme fraiche)  10g reduced fat butter 15g panko breadcrumbs  1 chicken stock cube crumbled  15g parmesan grated ½ tsp dried parsley  💕Start by bringing the pasta to boil in a large pan of salted water and cook according to packet instructions. Once cooked, drain and reserve the pasta water listed.  💕Next, season the diced chicken breast with salt, pepper and the smoked paprika. Add to a large frying pan and fry for 7-8 minutes until cooked. Remove from the pan.  💕In the same pan, add the diced onion for a couple of minutes until soft. Once soft, add a tsp of garlic for 30 seconds. 💕Add the chipotle paste, tomato puree and Elmea to the same pan and leave over medium heat. 💕In a separate small pan, add the butter over medium heat. When melted, add in the breadcrumbs and remaining tsp chopped garlic. Leave tossing occasionally until golden.  💕Meanwhile, add the crumbled chicken stock cube and pasta water to the sauce. Season with salt and pepper before and leave to thicken over medium to high heat for 4-5 minutes until thick. 💕Once the breadcrumbs are toasted, add half the parmesan tossing to combine and remove from heat. 💕Next, stir the remaining parmesan into the sauce mixing until it disappears and then add in the chicken, cooked pasta and dried parsley. 💕Once combined, serve the cooked pasta before scattering over the garlic breadcrumbs.
