KICKASS Apple Pie Cookies Makes 10 cookies Macros per cookie: 11g protein, 2g fat, 29g carbs, 196 calories Ingredients • 3 large apples, diced small (I like Honeycrisp) • 3 scoops (1 cup) vanilla protein powder • 1 cup old-fashioned oats • 1 cup oat flour • 1/2 cup Greek yogurt • 2 tbsp honey • 3 tbsp maple syrup • 1 tsp cinnamon (be generous) • Juice of 1/2 lemon (and zest) • Pinch of salt • Optional: 1/4 cup milk (any kind, only if dough feels dry) Instructions 1. Preheat oven to 350°F and line a baking sheet with parchment paper. 2. Cook apples: Heat diced apples with maple syrup, cinnamon, lemon juice (and zest), and a pinch of salt in a pan for 6–8 minutes until soft. Cool in the freezer. 3. Make dough: Mix protein powder, oat flour, oats, Greek yogurt, and honey in a bowl. If the dough feels too dry, add the optional milk. 4. Combine: Fold in the cooled apples. Roll into 10 balls and place on the baking sheet. 5. Bake for 12 minutes. Notes: If the cookies turn out dry, it could be due to the protein powder or the size of the apples you used. Whatever the case, just add a little milk to bring the dough together. ⸻ Storage: Store in a container on the countertop or in the fridge — just note that they can get pretty moist if left there too long.
