Cooking for an elderly parent, and the rest of the family can be a little bit overwhelming But it doesn’t have to be!  When I started cooking for my partners elderly mom, I was a bit overwhelmed. she needs soft food and the rest of the family wants regular food. Overtime I realized it was actually pretty easy to make two versions of most meals.  Here is how I make a healthy easy breakfast an 83-year-old on a soft food, diet and the rest of the family.  Every morning, our elderly parent starts her day off with the same breakfast. She made up herself and calls it her casserole. It consists of steel cut oats, oat milk, poached egg, fruit, and yogurt.  A bit of a strange combination if you ask me, but she loves it and it’s super easy for her to eat. And healthy!  To make life simple, I often make oats for the rest of the family since I already have a big batch cooked.  But we don’t want the combination that she has. So I made a savory bowl of steel cut oats.  I made a 10 minute miso broth with very little effort by combining water, miso paste, dried mushrooms, garlic, and grated ginger.  I brought that to a boil down to a simmer for about 10 minutes total.  When the broth was done, I added some frozen peas to it. And removed the mushrooms and sliced them up to add to the final dish.  We wanted some extra protein, but our elderly parent had the last egg! So instead, I air fried some chickpeas, which were a great substitution.  We love a lot of flavor in our meals. So I finished off our savory bowl of oats with chili oil, toasted sesame oil, seeds, and Thai basil.  This meal seemed a bit gourmet! And probably would’ve cost about $15-$20 at a fancy café. But it only took about 10 minutes to make!  Steel cut oats take a while to make. But to make things easier, I put them in a rice cooker and set a timer overnight so I can wake up oats. I also tend to cook them large batches and just reheat them throughout the week.  #elderlycare #softfooddiet #seniorcare #oats
