Chicken Carbonara Recipe: Ingredients: 12 oz bacon (chopped small) 2 chicken breast halves Cajun seasoning (to taste) 2 tbsps butter 1/2 onion (finely chopped) 3 garlic cloves (minced) 1/4 cup (white wine) 4 large eggs 1 cup parmesan cheese (freshly grated) Fresh ground pepper (to taste) 12 oz fresh pasta 8 quart pot filled 1/2 way 2 tbsps salt Fresh parsley Instructions: Start by frying your bacon until it's crispy. Remove bacon from pan and only reserve 2 tbsps of bacon fat and fry your chicken breasts that you have previously seasoned with cajun seasoning on the pan (make sure you discard excess bacon oil). Pan sear chicken breasts for 4 minutes on each side or until it reaches 165 degrees internally. Set chicken breast aside now add butter and once it melts add your onion and garlic, cook until onion is translucent, then add 1/4 cup of white wine and cook until wine reduces by half. Add your bacon back on medium low heat and let it cook for 4 minutes. Meanwhile fill an 8 quart pot with water half way and let it reach a boil. Once it reaches a boil, add salt the  add your fresh spaghetti and cook for 4 minutes. When it's done cooking, add spaghetti back to your bacon mix and fry on medium heat for 5 minutes. Whisk together eggs with parmesan and pepper. Turn off your stove (VERY IMPORTANT) and now add back your egg mixture to your pasta. Toss and mix very quick with your heat off so the egg mixture cooks with the heat of the spaghetti and it comes out very creamy. MAKE SURE your heat is off or else the hot heat will scramble your eggs and it will ruin your dish! ***I ate 1 cup of pasta with a lot of chicken and bacon and the total amount of carbs was 40. ------------------------------- Pasta Recipe: 1 3/4 cups cake flour 1/4 cup all-purpose flour 1 tsp salt 2 large eggs 3 egg yolks Step 1 Add a mound of flour to a flat surface. Dig a well in the center of the mound and add eggs and yolks. Using a fork, beat together the eggs and begin to incorporate the flour, starting with the inner rim of the well. The dough will start to come together in a shaggy mess when you have added at least half of the flour. Once you can knead your dough with out it sticking to your hands, then discard the leftover flour.  Step 2 Transfer to a lightly floured and clean surface and knead by hand for 10-15 more minutes until the dough is smooth, elastic and you have built enough gluten (if you press on your dough and it bounces back then you have built enough gluten). Wrap the dough in plastic and set aside for at least 30 minutes (and up to 4 hours) at room temperature covered with a bowl. Step 3 Cut off a quarter of the dough. Rewrap rest, and set aside. Lightly roll out the dough then pass it through your #1 setting on your Atlas Marcato Manual Pasta Roller. Fold it into halves and pass your dough again through #1 setting again (repeat 3 times). Make sure you lightly dust your pasta with flour if it starts to get sticky (that way it won't stick to the pasta roller). Now pass it 1 time through setting #2 , repeat with setting #3 then setting #4 and you stop!  Step 4 Now make sure that before you pass your pasta sheet through your spaghetti cutter, that your pasta is dusted well with flour so your spaghetti strands don't stick together when rolling out.
