@teagans.table: CHOPPED CHICKEN AND SWEET POTATO MEXICAN SALAD Ingredients: 700g sweet potato, chopped into 2cm chunks 2 tomatoes, chopped 1/2 red onion, diced 1 Lebanese cucumber, diced 1 can corn, drained and rinsed 1 can black beans, drained and rinsed 2 chicken breasts, seasoned (I use Screaming Seeds seasoning) 2 tbsp lime juice 1 tbsp fresh coriander Olive oil (to cook chicken and coat sweet potato) METHOD 1. Preheat oven to 180°C. 2. Place sweet potato chunks in a baking dish and drizzle with olive oil. 3. Roast for 35-40 minutes, or until golden. 4. Chop the chicken breasts into small chunks. 5. Season the chicken with your preferred seasoning. 6. Heat a frying pan with olive oil and cook the chicken until fully cooked (cooking time depends on chunk size). 7. In a large bowl, combine the tomatoes, onion, cucumber, corn, black beans, lime juice, and coriander. 8.
