Happy Taco Tuesday🥳 Crunchy Nacho Beef Tacos 🌮  I couldn’t let today pass without making tacos... and I’m so glad I did. 🙈 These came out so crispy, the beef filling is super creamy, and the sauce brings everything together. 🤤 INGREDIENTS  Taco shells: 4 medium tortillas Ketchup 60–80 g crushed nacho chips Beef filling: 400 g ground beef 1 small onion, diced 2 garlic cloves, minced 1 tsp smoked paprika 1 tsp oregano 1 tsp salt ½ tsp black pepper 60 g cream cheese 2 cheddar slices A little heavy cream (if needed) Sauce: 4 tbsp mayo 1 tbsp ketchup 1 tsp mustard 1 tsp pickle juice (optional) Garlic powder Pinch of salt For serving: Iceberg lettuce Tomato INSTRUCTIONS  1️⃣ Spread a thin layer of ketchup over each tortilla, then coat with crushed nacho chips. 2️⃣ Place the tortillas over the oven rack and bake at 200°C until crispy and golden. 3️⃣ While the tortillas are baking, cook the ground beef. 4️⃣ Add the onion and garlic, then season with smoked paprika, oregano, salt and pepper. 5️⃣ Turn off the heat and stir in the cream cheese and cheddar until melted. If the filling feels too thick, add a little heavy cream, a little at a time, until it’s nice and creamy. 6️⃣ Let the taco shells cool for 3–5 minutes, then gently open them up a little before filling. 7️⃣ Mix all the sauce ingredients together. 8️⃣ Fill the taco shells with the creamy beef, lettuce and tomato, then drizzle over the sauce. 📌I tested this with oil first, but the chips didn’t stick well.
