Dinner 4 of my $20 Dollar Tree dinner series is the most involved—but also the most impressive. I made a smoked sausage and pierogi skillet from scratch, including homemade pierogi filled with mashed potatoes made from a mix of frozen fries and instant four cheese potatoes. Knead for 5 minutes until smooth, cover, and let rest 20 minutes. Meanwhile, boil French fries for 7 minutes until soft. Mash with prepared instant mashed potatoes, adding a splash of milk and Parmesan for flavor. Roll out rested dough thinly and cut into circles. Add a spoonful of potato filling to each, fold in half, and pinch to seal. Boil pierogi in salted water for 3 minutes until they float. Drain and set aside. Slice sausage and fry in a skillet until browned. Add green beans, season, and cook until heated through. Remove from pan. Pan-fry pierogi in the same skillet until golden on both sides. Return sausage and green beans to the pan and toss to combine.
