@chiaraaaacooks: Counting beans on in-between days I know everyone is focused on holiday baking and holiday dishes but I wanted to spend a moment on a very simple, delicious and healthy staple— beans. Yes, we can all open a can and that’s absolutely fine. But have you ever made dried beans before? They’re absolutely delicious and so incredibly cost-effective. I like to do a bigger batch, prepared very simply and then use them in different dishes throughout the week. Having cooked beans on hand makes weeknight meal prep so simple. Here, I’m using cannellini beans, but this method works for any type of dried beans. You need to soak beans. I do this at night, by first rinsing dried beans and then putting them in a large non-metallic bowl and covering with water. Make sure there is room for the beans to expand a bit over night. Then, the following morning, I like to brown whole garlic cloves in olive oil. I add the drained beans and toast them for a minute or two. Add salt and pepper. I cover with water and a splash of white wine, a few bay leaves. Once it’s at a low simmer, I add two teaspoons of baking soda. Reduce heat to low and cook, low and slow, about 2.5- 3 hours, till soft. If you see foam rise to the top, skim it off. Don’t let them dry out or burn. Once your beans are cooked, what you can do with them is virtually limitless.
