in all likelihood, by the time they get to the table, they'll be mostly done... not nearly as runny as they are straight off the pan.

Eggs are safe to eat raw in Australia, not in the US as they bleach theirs which compromises the protective later and introduces salmonella risk. Not dangerous in Aus, but still may not be to your taste.
