@kindacrunchykindaboujee: I had a ton of extra heavy cream from Thanksgiving that needed to be used before it expired, so i got creative and whipped up this flourless pistachio cake with chocoate gnache and it is SOOOO good and SO easy to make! 4 eggs (seperate the yolks from the whites) Whip the whites with a hand mixer utill they are fluffy AF Combine yolks with 120 grams of ground pistachios (1 cup blended in a blender, dont blend too much or it becomes a nut butter) and add 150 grams of sweetener of choice (i used coconut sugar) and then slowly add in the whipped egg whites Pour mixture into a buttered cake pan and bake on 350 for 25-30 minutes Let cool in pan for 10 minutes before moving to a cooling rack For the gnache, mix together 140 ml heavy cream and 100 grams of dark chocolate, and then top the cake. I chose to top this with toasted coconut, but im sure it would be good with more pistachios or even no toppings at all.
