Low Carb Chicken Alfredo Bake 💯 Comfort food that loves you back! Full recipe is below. What you need: 5-6 boneless skinless chicken thighs 6 cups broccoli, chopped 1 1/2 cups cottage cheese (low fat or full fat, not 0%) 2 oz cream cheese (full fat preferred) 1/4 cup water 1/2 tbsp butter 1 tsp olive oil or avocado oil Mexican or cheddar shredded cheese Onion powder Garlic powder Sea salt Paprika What to do: 1 - Chop chicken thighs and broccoli into small pieces. Preheat oven to 375 F. 2 - Sauté the broccoli in a pan with oil or butter. Add some sea salt. Cook until fairly soft. 3 - Add 1/2 tbsp butter to a pan. Once fairly hot, add the pieces of chicken thighs. Cover in paprika, sea salt, onion powder and garlic powder. Cook until no longer pink on the inside flipping pieces halfway. 4 - In a blender, combine 1 1/2 cups cottage cheese, 2 oz cream cheese, 1 tsp garlic powder, 1/2 tsp onion powder, 1/4 cup water and sea salt. Blend until smooth. 5 - To a casserole dish, add the cooked broccoli then chicken. 6 - Cover in your homemade Alfredo sauce and mix well. 7 - Bake for about 15 minutes at 375 F. Remove from oven. CHEESY LOADED SWEET POTATO TACO BOWL 🧀🌮 This was so yum! A perfect quick and easy lunch or dinner recipe to try. Save for later☝🏼 •496 kcals per portion •25g PRO, 44g CHO, 24g FAT Serves 2: -400g of uncooked sweet potato -2 tsp of olive oil -Salt/pepper -2 cloves of garlic minced -200g of uncooked lean beef mince (less than 5% fat) -1 red pepper, diced -Taco seasoning (half a packet) Cheese sauce: -2 slices of butter cheese -A dash of water (approx. 4 tbsp but add as you go or if needed) Per bowl: -Shredded lettuce -Cherry tomatoes -10g of sour cream Method: 1. Chop the sweet potato into small chunks. Season with salt/pepper and drizzle with olive oil. Place in the oven at 200°C for 25-30 mins until soft and cooked. 2. Add garlic to a sprayed pan. Fry for 2 minutes then add the mince and break down. Cook until browned then add the red pepper and taco seasoning. Add a dash of water and fry for 5 minutes. 3. For the cheese sauce, add the cheese slices to a pot along with 4 tbsp or so of water (add more as you go if needed). Keep stirring on a medium heat until the cheese breaks down and everything becomes smooth. Serve this quickly as it will harden up fast. 4. Prepare each bowl with lettuce, tomatoes, sweet potato, taco mince, sour cream and the cheese sauce (work fast with this).
