Don’t take them out of the oven straight away, but open the oven door slightly instead and allow them to cool. Then take them out, and allow them to cool to room temp. Refrigerate for at least 4 hours, but overnight is even better.  6. Place one large strawberry on top of each cheesecake. Put whipped cream into a piping bag and squeeze a circle of cream around each strawberry and make a little bob on top.
