This year we’re using @Wholesome Sweetener Organic Fair Trade  Honey in two different ways to make honey walnut tong yuen rice balls. Wholesome Organic Fair Trade Honey has distinct butterscotch notes, which pairs so well with the walnuts in the filling, an ingredient that represents happiness in Chinese culture. Traditionally rice balls are served in a Chinese rock sugar broth but today we’re making a honey osmanthus broth for this symbolic dessert.   My family and I wish you #AllTheBest this Lunar New Year!    Walnut Filling 55g (1/2 cup) toasted walnuts 2 tbsp Wholesome Organic Fair Trade Honey 1 tbsp granulated sugar 1/4 tsp salt   Tong Yuen Dough 130 g (1 1/3 cup) glutinous rice flour 120 ml boiling water   Broth 480 ml (2 cups) water 1/3 cup Wholesome Organic Fair Trade Honey 1 tbsp dried osmanthus flowers   In a food processor, blitz walnuts until it reaches a coarse crumb. Pour nuts into a large bowl and combine with Wholesome Organic Fair Trade Honey, sugar, and salt. Portion into 12 even balls. Transfer balls to a plate and place in freezer to set while you make the tong yuen dough   In a large bowl combine glutinous rice flour and boiling water. Mix with a large spoon until it comes together. With your hands, knead the dough for 1 – 2 min. Divide into 12 equal portions   Remove the filling from the freezer. Take a piece of dough and using your fingers, press the dough until it becomes a 2-inch round disc. Place a piece of the filling into the centre and pinch seams shut and roll between palms of hands until smooth. Repeat with the remaining dough   In a large pot of boiling water, cook rice balls over medium heat until they float, about 5 min   While the rice balls are cooking, bring water to a light simmer in a medium pot. Add osmanthus flowers and honey. Mix until combined. Allow flowers to steep for an extra 5 mins. Strain flowers before serving   #wholesome #wholesomebffs #lunarnewyear #allthebest
