This was a 10/10! The perfect option for meal prep or a fresh summer dish this Summer / Christmas! Here’s how to make it: Ingredients: * 250g protein penne pasta (I used Vetta) * 400g Fagiolo Borlotti Beans * 400g Cannellini Beans * 100g Kalamata Olives * 200g Cherry Tomatoes, halved * 50g Red Onion, finely sliced * Handful of Parsley * 20ml Olive Oil * 2 Garlic Cloves, minced * Salt and Pepper Recipe makes 4 serves. Method:
1. Cook the penne pasta according to package instructions, then drain and let cool.
2. Toss the cooked pasta with beans, olives, cherry tomatoes, parsley and red onion in a large bowl.
3. For the dressing, combine olive oil and minced garlic.
4. Drizzle the garlic oil dressing over the pasta salad and mix well. Season with salt and pepper to taste.
