Try swapping the zucchini for turkey, and for the sauce saute chopped zucchini in olive oil and a pinch of salt, 1/4 water and cover until til the zucchini has melted down to a sauce.

idea olives oil for sauce.Also removeingthr skin the zucchini can make it less biter. I would put it in strainer with cheese cloth and heavy can or pan on top. let drain for few hours to drain more
