Creamy Peanut Udon Noodles! This is one of my favourite dishes to make throughout the week using a secret ingredient that adds depth, creaminess and many nutritional elements - peanut butter! Peanuts and peanut butter are pantry staples, and for good reason! Not only are they economical, tasty and nutritious to ramp up your protein intake, thy are also extremely versatile and add a flavour punch to a variety of recipes :) Check out www.peanutbureau.ca for a selection of unique recipes! @Peanut Bureau of Canada #AD  Recipe: Yields: 6-8 servings Prep: 1 hour Cook: 25 minutes Sauce:         1 cup smooth peanut butter         1/4 cup soy sauce         2 tbsp siracha         1 tbsp oyster sauce         1 tbsp hoisin sauce         1 tbsp honey         1 tbsp lime juice         3 garlic cloves grated         2 tbsp fresh grated ginger         1/4 cup hot water Udon Noodles: (You can use 400g of store bought udon as well!)         5 cups (600 g) of all purpose flour         1 1/4 cup hot water         1 tsp salt Stir fry add-ins:         6 cooked Chicken thighs         1 sliced red bell pepper         1 cup sliced red cabbage         6 sliced green onions         1 cup defrosted edamame         2 grated carrots         1 cup bean sprouts (optional) Toppings:         Cilantro         Toasted peanuts         Green onion Instructions:     1    To make udon, combine flour, salt and hot water in a large bowl, mix till just combined.     2    Transfer to a counter top and knead for 5-10 minutes or until it forms a smooth ball. Let rest in plastic wrap for at least an hour.     3    Using a pasta machine or rolling pin, roll out to desired thickness and cut into strips.     4    Boil pasta in salted water for 3-5 minutes or until soft. Drain and transfer to a large bowl with iced water to stop the cooking.     5    To start the stir-fry, in a large wok or pan add 2 tbsp vegetable oil and heat on medium high. Add the white parts of the green onions, cabbage, carrots and edamame. Season with a sprinkle of salt and cook for 4-5 minutes or until softened.      6    Add in red bell pepper and cook for another 2 minutes.     7    Add in noodles and turn the heat to medium low and stir until noodles are heated through.     8    Add peanut sauce and stir until heated and fully combined.     9    Serve immediately topping with chicken, cilantro, peanuts and green onions.
