If you are a biryani lover, you will love this salmon fish biryani with tartar raita.  Salmon marinade ingredients: 3 Salmon Fillets; cubed 3 tbs yogurt 1 tbs coriander and cumin powder 1/2 tsp ginger powder or paste 1/2 tsp garlic powder or paste  1/2 tsp chilli powder  1/4 tsp turmeric powder Salt to taste 1 tbs lime juice  Powder of 5 cloves, 2 green cardamom, and 1 mace  1/2 onion, thinly sliced and fried Tartar Raita ingredients: 1 cup yogurt 1 shallot or small onion, finely chopped 2 garlic clove, minced 1 tbs chives, finely chopped 1 tbs capers, finely chopped. Substitute with dill pickle  1 tbs lime juice 1/4 tsp black pepper 1/2 tsp Dijon mustard, optional 1 tsp Worcestershire sauce  Salt to taste  Rice ingredients 3 cup rice 1 tbs salt 1 cinnamon stick  8-10 cloves  5 green cardamom 1 star anise 2 black cardamom  2-3 bay leaves  2 mace  Water to rinse rice and cook Other ingredients 8-10 strands of saffron  1/2 onion thinly sliced and fried 1/4 cup water 2 tbs chopped cilantro 4 tbs ghee 5-6 green chilli Instructions: 1.Rinse rice until water runs clear and let it soak for at least an hour. 2.In a hot heavy bottom pot/dutch oven, add 2 tbs ghee and onion. Fry until golden brown. Transfer to a plate lined with paper towel. 3.In the same pan, add salmon cubes with skin side down. Turn off the heat. Sprinkle some salt. 4.In a mixing bowl, add all the remaining marinade ingredients and half of the fried onion. Mix until well combined. Layer the mixture over the top of salmon. Let it marinade covered for at least an hour. 5.In a small bowl, add warm water and saffron and leave it until ready to use. 6.In a small mixing bowl, add all the raita ingredients. Mix until combined and keep it refrigerated until ready to serve.  7.In a pot, heat about 7 cups of water. Add salt and all of the spices. Bring it to a boil and let it simmer for 10 mins. Remove big pieces of spices. Strain soaked rice and add it to the pot. Let it boil until 90% cooked. 8.Strain rice and spread evenly over the top of salmon. Add ghee, saffron water, remaining fried  onion, green chili,and cilantro over rice. Cover and cook for 20-25 mins. Turn off the heat and let it sit for 15 minutes before serving. 9.Serve it hot with raita.
