@bitta_banging: Lobster Toasties and Tacos w/Chef Tony Salomon🫡 What an experience getting to learn from one of the best in @ecole_ducasse the art of plating. We both had the similar ingredients but the execution in both of these dishes really shows the levels to this game. Lobster poached in a court-bouillon and finished in brown butter, lightly pickled fennel, lobster head mayo, tarragon mayo, hibiscus gel, some micro-greens and flowers from the garden. Chef Tony had black tuilles as his taco shells and I used brioche toasted in the same brown butter as the lobster. Both were unbelievable bites but I have a long way to go before I catch up to him.
