@shaylatalei: Ingredients: 3 tbsp butter 3 tbsp olive oil 1/2 cup chopped onion 1/4 cup chopped carrot 3/4 cup chopped celery 6 oz mushrooms, diced 2 cloves garlic, minced 4 tbsp flour 4 cups turkey stock (or chicken stock) 1 tbsp soy sauce 1 bay leaf 1/2 cup wild rice 2 1/2 cups chopped leftover turkey 1/4 cup half and half 1 tbsp chopped fresh thyme 1/2 tsp kosher salt 1/2 tsp ground black pepper Instructions: In a large stockpot, melt the butter and olive oil over medium heat. Add the onion, carrot, and celery. Cook for about 10 minutes, stirring occasionally, until the onions are soft and translucent. Stir in the mushrooms and garlic. Cook for an additional 5 minutes until the mushrooms are tender. Sprinkle the flour over the vegetables. Stir well and cook for 3-4 minutes until the flour is browned and thoroughly cooked. Gradually pour in the turkey stock and soy sauce, stirring constantly to break up any flour clumps. Add the bay leaf. Increase the heat to medium-high and bring the soup to a boil. Reduce the heat to medium and let it simmer for 30 minutes. Add the wild rice and simmer for another 35 minutes until the rice is tender. Stir in the leftover turkey, half and half, thyme, salt, and pepper. Let the soup cook for an additional 20 minutes. Remove the bay leaf before serving.
