Need some midweek dinner inspo then this is the answer. So much flavour, perfectly balanced and easily prepable. Swap the steak for any protein you like.  under 650kcal and 45g protein (approx) serves 2  For the Steak: 2 steaks of your choice, I used sirloin 1 tbsp cajun spice mix  1 tsp brown sugar  1 tsp garlic granules  For the Charred Corn Salad: 2 ears of corn 2 tbsp cajun spice mix 1/2 red onion, finely diced 1/4 cucmber, deseeded and niced Handful of fresh coriander, chopped (or use basil) 80g crumbled feta cheese 1 heaped tbsp Greek yoghurt Juice of 1 lime 1 green pepper For the dressing: Handful of basil 2 spring onions, trimmed 2 tsp honey  1 tbsp red wine vinegar  2 tbsp water  2 tsp olive oil pinch of salt 1/2 tsp garlic granules  1 heaped tbsp nutritional yeast or use parmesan  Rub the steak with a mix of Cajun spice, brown sugar, and garlic granules. Let it sit at room temperature for 30 minutes. Char the corn by rubbing the ears with a little olive oil and Cajun spice. Grill or air fry at 200°C for about 8-10 minutes, turning occasionally, until charred. Let it cool slightly, then slice off the kernels. Make the corn salad by combining the charred corn, diced red onion, chopped coriander, crumbled feta, diced green pepper, Greek yogurt, and lime juice in a bowl. Season with salt and pepper. Blend the dressing by mixing basil, trimmed spring onions, honey, red wine vinegar, olive oil, and nutritional yeast (or Parmesan) until smooth. Adjust seasoning to taste. Sear the steak in a hot skillet or grill pan for about 2-3 minutes per side for medium-rare. Let it rest for 5 minutes, then slice thinly against the grain. Assemble the bowls with the corn salad at the base, top with sliced steak, and drizzle with the Green Goddess dressing. Garnish as desired. #healthyrecipes #mealprep #highprotein
