Ramadan series Day 10 Chicken Croquettes are so crispy on the outside and soft on the inside. Recipe Ingredients: 2 cups boiled chicken 4-5 medium potatoes 1 cup corn 1 chopped cup bell pepper 1 cup cheese 1 small onion 3 tablespoon oil 2 teaspoon salt 2 teaspoon black pepper 2 teaspoon chili flakes 1 teaspoon soy sauce ½ teaspoon dark soy sauce 1 tablespoon all purpose flour 1 cup milk Cornstarch 2 eggs Breadcrumbs Method: In a pan add 3 tablespoons of oil and add onions. Sauté onion until translucent and then add boiled chicken and mix it well. Add 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon chili flakes, 1 teaspoon soy sauce. Mix all well and then add 1 tablespoon all purpose flour. Cook for 1 minute. Add milk and let it cook until all liquid evaporates. Add dark soy sauce, mix it all well and then let it cook down. In a bowl add boiled potatoes and mash them. Then add the chicken mixture, bell peppers, corn, cheese, 1 tablespoon salt, 1 teaspoon black pepper, 1 teaspoon chili flakes and mix it all. Using oil on hands make small balls into an oval shape. Rest them in the fridge for 30 minutes. Dip the croquettes in corn starch coating well, then dip in egg and then in breadcrumbs.
