Ok so I had to do some research. The song was for Catholics in England who couldn't openly be Catholic! The gifts were code words like The two doves meant the Old and New Testament!!

so couple of things, they are all birds, and cumulative. so day 1 you get a partridge in a pear tree, day 2 you get 2 turtle doves and a partridge etc.
