@_lacebakes_: ✨ THE 12 DAYS OF BREADMAS ✨Day 6: Christmas Crack™️ Ingredients: 40 saltine crackers* (enough to line a half sheet pan -18x13) 1 cup (225g) salted butter 1 cup (200g) light brown sugar Dash of vanilla extract 1.5 cups (255g) semisweet chocolate chips or chopped dark/milk chocolate Flaky sea salt Toppings of choice - crushed cereal, toasted nuts, crushed candy canes, Reeses, Heath Bar, Crunchie bar, crushed Biscoff cookies, dried fruit, festive sprinkles, pretzels …whatever you want! *In the UK I use Barilla Cracker Salati/ Colussi Salted Crackers/Doriano crackers. Size of crackers will vary, my recent batch only needed 20. In the UK these can be found at Italian delis or at some of the main supermarkets Method: Preheat oven to 400F (205C). Line large baking tray (18x13 or similar) with nonstick parchment paper. Place crackers in an even layer over the paper. Melt the butter and brown sugar together in a saucepan over a medium heat. Stir frequently until the melted butter and sugar have combined into a smooth mixture and then bring to a gentle boil over a medium heat for 4 minutes. Stir it frequently with a wooden spoon until it’s smooth and thickened. Stir in a dash of vanilla extract. Pour the caramel over the crackers and smooth into an even layer. Bake for 6-7 minutes or until the caramel is nice and bubbly. While it’s baking, prep/chop any toppings you plan to add on top. Remove the tray from the oven. Sprinkle the chocolate chips over the caramel evenly and the place tray back into warm oven for a couple of minutes (ensure it’s been turned off). Once the chocolate chips have totally softened, spread the chocolate evenly over the caramel crackers. Sprinkle on your toppings of choice and a little sprinkle of flaky sea salt. Chill in fridge for at least 30 mins, or leave at room temperature until chocolate is fully set and no longer melty.
