Chili Cheese Dogs 🌭 Recipe in caption below👇🏼  I had some leftover hotdogs from my Korean corn dog video  so HAD to make a chili and some fresh hotdog buns to build the ultimate chili dog. Topped with cheese, jalapenos, sour cream and crispy onions 🔥 This chili is  PERFECT one for hotdogs, but can also be used really well as a main, served with rice. See notes below for bulking it out with kidney beans for a more substantial meal. Serves 4-6 as a main, but many more as a hotdog topping - Olive oil - 1 green bell pepper - 2 vine tomatoes - 1 jalapeno - 500g beef mince - 1 onion, finely diced - 2 tbsp ground cumin - 1.5 tbsp ground coriander - 1.5 tbsp smoked paprika - 1 tbsp chilli powder (adjust depending on how spicy you want it - this recipe is spicy) - 0.5 tbsp chilli flakes - 0.5 tbsp garlic powder - 0.5 tbsp onion powder - 3 large cloves of garlic, minced - 1 tbsp tomato paste - 1 litre chicken stock - 1 x 400g tin of tomatoes - Salt & pepper 1. Char the green bell pepper, tomatoes and jalapeno over an open flame until all of the skins have blistered. this adds a subtle smokiness to the dish. Leave to cool slightly before finely dicing all three, discarding of the seeds of the pepper and core of the tomato. 2. Sear the beef mince in a pan in a splash of olive oil over a high heat until browned. Turn the heat down to medium, add the onion then cook for a few more minutes until softened. 3. Add spices to the pan, cook for a few minutes, then add the charred vegetables and remaining ingredients and mix. Season well with salt and pepper. 4. Bring everything to a simmer, then place into a fan oven of 140 C / 285 F for 4 hours, checking every hour topping up with water if it is looking dry at any point. 5. Once cooked, remove from the oven and you should have a thick, rich, spicy chili ready to serve with rice or on your hotdogs! If you want to make this a more substantial meal, add 1 x tin of kidney beans to the chili 45 minutes before it finishes cooking in the oven.
