@sophymed: Chocolate & salted caramel Linzer cookies❄️🍪 Ingredients: 200g soft butter (not melted as I had bc I overheated it) 70g powdered sugar vanilla 1 medium egg (room temperature) 30g cocoa powder 60g almond flour 240-250g all purpose flour In a big bowl mix together soft butter, vanilla and sugar until the white texture. Add cocoa powder, almond flour and all purpose flour. Mix together until the soft texture. Knead the soft dough. If it’s too sticky, add more flour. Let it cool in the fridge 30 minutes or in a freezer 15 minutes. Divide the dough into halves for your convenience. Cover the working surface with some flour and roll the first half of the dough ~1/2cm thick. Use your favorite cookie cutter: first make round ones and then ones with stars or small circles inside. Bake in the preheated to 180C oven for 8-10 minutes. Let it cool 10 minutes. Sprinkle the “tops” with powdered sugar generously and spread your favorite jam on the “bottoms”. Put two parts together gently. Store in an airtight container for up to a month💘 For the chocolate filling: Pour 200 ml hot heavy cream over 100g dark chocolate. Mix until incorporated. If it still stays crumbly, heat it on the water bath or in a microwave.
