All of these meals last in the fridge for 3 - 4 days. You can also freeze them!☺️ • Veggie Frittata This recipe makes about 4 servings: 1 zucchini cut into pieces 2 bell peppers cut into pieces 1 tablespoon (garlic infused) olive oil 10-12 eggs 2 tablespoons oregano  pinch of salt (to taste) pinch of black pepper (to taste) 1/4 cup milk, I used almond milk (60 ml) 1/2 cup grated lactose-free cheese (120 ml) • 1. Fry the veggies with the olive oil until softened 2. In a bowl whisk eggs, milk, spices and grated cheese together 3. Pour the mixture into the pan. Transfer to oven and bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes until the center is just set. 4. Serve with some oat bread, for example 5. Store in the fridge • Chicken Bolognese This recipe makes about 8 servings: 800 g / 28 oz. minced chicken/turkey meat 1 tablespoon (garlic infused) olive oil salt & pepper, to taste 4 tablespoons chives (if you don’t have IBS, you can of course add some garlic & onion to this) 4 tablespoons oregano  2 tablespoons paprika spice pinch of chili powder 750 g / 26.5 oz. crushed tomatoes  400 g / 14 oz. canned lentils 1/2 cup pasta water (120 ml) • 1. Cook the chicken mince on a pan with the olive oil 2. Add the spices and stir 3. Add the crushed tomatoes and the pasta cooking water and let simmer for about 10 minutes 4. Serve with spaghetti.
