WHAT I EAT IN A DAY AS A DIETITIAN (Ramadan Edition) Strawberry Banana Smoothie: 1 cup kefir 1 cup strawberries, fresh or frozen 1 ripe banana 3 tbsp hemp seeds 2 tbsp peanut butter Lasagna Recipe:  Lasagna sheets (oven-ready) 1 onion, chopped 2 cloves garlic, mashed 1 lb ground beef or turkey 1 jar marinara sauce Basil  2 tbsp Olive oil  Assorted vegetables (carrots, zucchini, squash, red bell pepper, spinach), chopped Ricotta cheese Cottage cheese Mozzarella cheese Salt and pepper to taste 		 Instructions: 1. Preheat the oven to 375°F (190°C). 2. In a skillet, add onion and cook until soft. Add garlic and cook until fragrant. Add ground meat until browned and add basil.   3. Add jar of marinara sauce and simmer on low while you cook the rest of the veggies.  4. Add chopped vegetables to a second skillet and cook until softened. 5. Add cooked vegetables, ricotta and cottage cheese & blend together. 6. In a baking dish, spread a layer of meat sauce on the bottom. Place lasagna sheets on top. 7. Layer with the meat and vegetable mixture, followed by the cheese mixture. 8. Repeat layers until all ingredients are used, ending with a layer of meat sauce on top. 9. Sprinkle mozzarella cheese over the top layer. 10. Cover with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes until bubbly and cheese is melted. 11.
