We’re taking a fresh approach to recipe testing—starting with dishes already perfected by the food pros we admire, then beefing them up with Flannery. First up: @david_tanis’s Galbi recipe. While traditionally used for Korean-style short ribs, we took a detour and swapped in thick-cut zabuton (aka Denver steaks). Sliced and tucked into crisp lettuce wraps with a dollop of ssamjang and slivers of scallion—let’s just say, no regrets. Our takeaways? The marinade is a breeze to throw together if your pantry is well-stocked, delivering just the right balance of sweet, umami depth. It also caramelizes beautifully, leaving a lacquered edge on every bite. The recipe makes a generous amount of sauce, so we’d consider halving it—or, @david_tanis, can we freeze the rest? As for the cut, we reverse-seared our 1.5-inch-thick zabuton steaks—a cut from just beside the prime rib, meaning you’re basically getting ribeye-level quality at a fraction of the cost. With its intricate webbing of marbled fat, tenderness is guaranteed. We slow-roasted at 275°F until our @meatermade thermometer read 125°F internally, then finished with a hard cast-iron sear to GBD (golden, brown, and delicious).
