@dr.vegan: Chickpea Curry Ingredients: Boiled or canned chickpeas 2 cups Vegetable oil onions 1/2 cup Minced ginger 1 tbsp Minced garlic 1 tbsp tomato puree 1 cup Coconut milk 1/3 cup Handful of baby spinach Seasoning: salt to taste chili powder 1 tsp coriander powder 1 tsp Cinnamon 1/2 tsp cumin 1 tsp turmeric 1/2 tsp Amchur powder 2 tsp Method: Add oil and onions to a pan and cook for 2-3 mins until translucent. Add minced ginger and garlic, mix and add the seasoning. Cook for another 5 mins and add the tomato puree and coconut milk. Continue cooking for 5 mins and then add the chickpeas. Add some water if the sauce is too thick at this point. Mix well, add the spinach and let it cook on medium heat for around 5 mins.
