Happy Holidays everyone. 🎄You all love some roast root vegetables so here is Version 3.0 on my yearly Christmas Carrot recipe. This year I wanted to make it a bit more batch for a larger amount so all the root veg get seared off like a piece of meat and then thrown into a roasting tray covered in the glorious spicy glaze and we let the oven do its work. What’s left is this perfectly cooked, sticky and spicy carrots and parsnips. The whipped ricotta is hit with lemon and spices, that just give the veg something o cut through its richness. If you want a a more roasted style, half the marinade amount and you’ll get less glaze and more roasting.
