The whole panettone process took me about 2 weeks of preparation, so be ready for a world of pleasure and pain.

 Chocolate Almond Panettone Glaze 150g almond meal
150g icing sugar
25 cornflour
16g cocoa powder 
192 fresh egg whites Sieve almond meal and combine with icing sugar, cornflour, and cocoa powder. Add egg whites and mix until smooth. Cover with plastic wrap, pressing it against the surface, and rest in the fridge for 24 hours. 
Bring to room temperature before use on top of the final proof of the panettone.
