Try it and tag me! d’EATS -1/2 cup soft unsalted butter -1/2 cup packed light brown sugar -2 tbsp granulated sugar -1 egg -1 tbsp instant espresso -1 tsp vanilla bean paste (or vanilla extract) -1 cup all purpose flour -1 cup rolled oats -1 tsp cinnamon -1/2 tsp baking soda -1/2 tsp baking powder -1/2 tsp salt Icing -1 cup sifted powdered sugar -1 tbsp heavy cream -1 tsp cinnamon How too: Start by preheating your oven to 350F In a small bowl combine your flour, oats, cinnamon, baking soda, baking powder and salt. Mix together and set aside. In a large bowl start by creaming your butter and sugar until smooth. Add in your egg, vanilla and instant espresso. Mix well before incorporating your dry ingredients. Scoop your cookies into a lined baking sheet and chill in the refrigerator for 20-30 minutes.
