It’s crispy fried bread season and this one’s always a winner.  Would you try this at home?  Recipe below ⬇️  1 small size Lebanese bread  Vegetable oil for deep frying bread  30ml Virgin olive oil  20gm butter  1/2 cup chickpeas (canned or boiled)  1tsp capsicum paste  1/4 tsp ground cumin  1/4 bunch coriander chopped  3 garlic cloves sliced thinly  2 red chillies sliced thinly  Salt & pepper  Paprika  1 lemon juiced  3 brushed potatoes diced  Pomegranate seeds and chopped coriander leaves for garnish  Tahini dressing  1/4 cup tahini 6 tablespoons yogurt  1 lemon juiced  Teaspoon salt White pepper  30 ml water Method  Make your tahini dressing by mixing all the ingredients together. Set aside.  Heat veggie oil in a wok or wide rim pan until very hot.  Place the Lebanese bread against a stainless wire strainer and press it down with another smaller strainer or any stainless ladle.  Fry until golden brown. Drain properly from all oil and set aside on a paper towel lined plate.  In the same oil, fry the diced potatoes until golden. Remove and drain on paper towel lined plate. Set aside  In a small fry pan, heat olive oil and butter and add the garlic and chilli. Fry for a few seconds, then add capsicum paste, cumin powder, paprika and reduce heat to low until all combined together.  Add the fried potatoes and chickpeas to the pan and season with s&p. Mix well. Add the juiced lemon. Mix for a few seconds. Add the chopped coriander. Mix for 15 seconds and then pour in to the fried bread bowl  Drizzle with tahini dressing, chopped coriander leaves and pomegranate.
