Pour the wet ingredients into the dry ingredients and mix well to combine a batter. Pour the batter into the prepared cake tins and bake at 180°C for 30-45 minutes. 6. Allow the cake to cool for 2 hours at room temperature. 7. While the cake is cooling, prepare the frosting by creaming together the icing sugar and cold margarine using an electric whisk for 5 minutes. At first it will be dry, resembling bread crumbs but it will eventually begin clumping together. 8. Add in the 2 cups of cold cottage cheese and vanilla. Whisk on medium speed for a further 3 minutes. 9. Once the cake has cooled, cut it horizontally in half, fill the middle of the cake with half of the frosting and chopped pears. Cover with the other half of the cake and top it with more frosting. Serve immediately or allow it to set in the fridge for 30 minutes. Enjoy!
